Christmas Turkey Meatballs

Our Christmas spice blend is very versatile and doesn’t have to be used for Boxing Day leftovers! Try making turkey mince (or any other mince) meatballs, and yes, the recipe includes cranberries! Leave the meatballs to rest before cooking as the dried cranberries will soften. serves 4-6

  • 1 carton Christmas spice blend

  • 500g turkey mince

  • 30g dried cranberries, finely chopped

  • handful chopped fresh coriander

  • 1 tbsp oil

  • 300 ml ‘secret sauce’

  • 1 can whole tomatoes, chopped or blended

  • 1 tbsp cranberry sauce

  • fresh chillies, finely chopped (optional)

  1. Mix the mince with HALF the spices, HALF the coriander, the cranberries and some seasoning and make into about 15 balls. Chill until needed.

  2. Heat the oil in a large pan and fry the balls until golden on all sides. Remove from the pan.

  3. Add the remaining spices to the pan with the optional chillies and fry until fragrant.

  4. Add the ‘secret sauce’ and tomatoes and bring to the boil.

  5. Stir in the cranberry sauce, then return the meatballs and cook gently for up to an hour.

  6. Check for seasoning, then stir in some coriander and serve with rice and flatbreads.
