Christmas Stuffing

Try this delicious stuffing with your turkey: a spicy mix of sausage meat, chestnuts and cranberries. You can either make balls, as in our photo, or stuff the turkey with it. And the leftovers are gorgeous hot or cold or added to bubble and squeak! serves 4-6

  • 1 carton Christmas curry blend

  • 500g sausage meat

  • 200g cooked and peeled chestnuts, roughly chopped

  • 30g dried cranberries, finely chopped

  • 1 tbsp oil

  • 1 onion, very finely chopped

  • 1 tsp salt

  • handful fresh coriander, finely chopped

  1. Heat the oil and gently fry the onion until soft. Add the spices and fry for a few moments until fragrant.

  2. Add this to a bowl containing all the other ingredients and combine well. Chill until needed.
