Our fabulous Christmas Turkey Curry really is the perfect way to use up your leftover turkey, cranberry or redcurrant sauce and veggies too!. Serves 4-6
Spice Mix Ingredients: cumin seeds, paprika, turmeric, salt, garam masala (includes coriander seeds,cardamom, cloves, fenugreek seeds, poppy seeds, yellow mustard seeds, ginger), nigella seeds, chillies, cinnamon, fenugreek leaves, cayenne Allergy advice: for allergens, see items in bold
Ingredients:
1 carton Christmas curry spice blend
300ml/1/2 pint 'secret sauce'
2 tbsp vegetable oil
2 cans chopped tomatoes
4 tbsp cranberry sauce or redcurrant jelly
juice of a lime or lemon
leftover cooked turkey meat, cut into bite-sized pieces (or sliced is fine!)
leftover vegetables such as peas, broccoli or french beans (sprouts are particularly good!)
handful fresh coriander, to serve (if you have any in the fridge; otherwise don't worry!)
Recipe
1. Heat the oil in a heavy pan and fry the spices until fragrant.
2. Add the 'secret sauce' and the tomatoes and bring to the boil, then simmer.
3. Add a couple of tbsp of the cranberry/redcurrant sauce and stir in until melted.
Add the rest to taste, depending how sweet it is.
4. Add lemon or lime juice to taste.
5. Roughly chop the meat and add to the hot sauce, warming through for about 10
minutes, together with any leftover vegetables you have lurking in the fridge!
6. Serve with rice or flat bread, and scattered with fresh coriander.
Cooks Notes
This makes a lot of sauce, so you can put a third aside to make coronation turkey, bitspicy-style! Add a couple of tbsp of anything creamy to the cold sauce - cream, yoghurt, creme fraiche or mayonnaise - adding a little more lemon or lime to taste. Coat the cold meat with the mixture and leave so that the flavours mingle. Serve with bubble and squeak!
Alternatively stir cream or yoghurt into the hot sauce to make something like tikka masala. This obviously makes it very mild for a true family meal!
You can use this spice to make a delicious lamb curry, using half the sauce and 700g diced lamb. Add cranberry sauce or redcurrant jelly to taste.
Save time and prepare the sauce in advance so you can freeze ready for Boxing Day!
