Christmas chicken or turkey with Seasonal Coleslaw

Fancy a light recipe over the Christmas period, and you’ve got a spare carton of our seasonal spice blend? Try out these healthy and fresh chicken/turkey pieces and coleslaw with festive additions serves 4

  • 1 carton Christmas curry

  • 700g chicken or turkey breast meat, cut into large pieces

  • 2 tbsp oil

  • 2 tbsp lemon juice

  • a small cabbage, very finely sliced

  • half a red onion, very finely sliced

  • 2 tbsp dried cranberries, chopped

  • 2 tbsp pecans or walnuts, chopped

  • 150g plain yoghurt

  • 1 tbsp lemon juice

  • 1 clove garlic, crushed

  • salt and pepper

  1. Mix the spices with the oil and 2 tbsp lemon juice. Smother the chicken and leave to marinade for a few hours.

  2. Combine the other ingredients in a bowl and leave in the fridge for an hour. Season to taste.

  3. Heat the oven to 180 degrees and cook the meat for 25 minutes.

  4. Leave the meat to rest for 5 minutes before slicing, then serve with the coleslaw.
