At Bit Spicy we eat a lot of fried rice - left over from all the curry we eat! The only ingredients needed are rice (obviously!), eggs, peas and spring onions, with soy sauce and chilli sauce to add flavour. Everything else depends on what you have in the fridge. So here is our basic recipe and quantities, or check out our other fried rice recipes with XO sauce, a favourite HongKong cheat. In the picture we have Chinese sausages (imagine a chorizo with a sweet 5-spice flavour!), prawns and chicken, but all or any of these can be omitted , according to preference. serves 4
500g cooked rice (or 250g uncooked weight)
2 tbsp oil
150g frozen peas
4 eggs, beaten
4 spring onions, finely chopped
Heat a small frying pan and add the eggs. Cook quickly until cooked but very sloppy.
Heat the oil in a large wok or pan and add the peas, rice and onions together. Cook until everything is hot, then stir through the egg. Cooking it in this way means you get nice big pieces of egg.
Serve with soy sauce and a hot chilli sauce.
