Cauliflower with Malay East Coast Spices & Kuantan dipping sauce

Our versatile Malay East Coast Spices and Kuantan dipping sauce are delicious with cauliflower. You won’t need all the spices (unless you are eating a huge amount of cauli!), so just take a couple of teaspoons-worth away from your main curry or marinade. serves 4-6

  • 1 large cauliflower, broken into florets and par-boiled

  • 2 tsp Malay East Coast spices

  • 1 tbsp oil

  • small handful chopped coriander

  • 125ml white vinegar

  • 2 tbsp brown sugar

  • 2 small chillies, very finely chopped

  • 4 cloves garlic, crushed

  1. Place the cauliflower pieces in an oven-proof dish. Mix together the spices and oil and gently rub into the cauliflower. Bake for 20 minutes.

  2. Meanwhile place the vinegar, sugar, garlic and chillies in a pan, bring to the boil and simmer for 20 minutes.

  3. Pour half the vinegar mixture over the cauliflower and return to the oven for another ten minutes.

  4. Scatter with the coriander and serve warm, with extra dipping sauce on the side.
