Chinese mushrooms are a really versatile and flavoursome ingredient for many dishes. Pick them up very cheaply in an Asian shop, and you will find them to be much better quality than the supermarket offerings. Soak in warm water rather than hot, as this way they retain their flavour rather than it all ending up in the liquid! This is the perfect light lunch or supper. Serve with a splash or soy sauce or chilli sauce. serves 2
2 large Chinese mushrooms, soaked for an hour in warm water (see above), and finely diced
100g prawns, finely chopped
2 spring onions, finely chopped
white pepper (black if you don’t have white)
4 eggs, beaten
Fry the onions, prawns and mushrooms in a little oil until the onions are just cooked. Remove from the frying pan.
Add the eggs to the pan and cook quickly, stirring well.
Return the other ingredients to the pan and cook gently. Finish off under the grill if it looks a little raw.
Serve with a splash of soy sauce, and some chilli sauce on the side if required.
