Beef Burritos

Burritos are a fantastic way to use up leftovers! We particularly like them with rice, although refried beans are a popular option. Add some cheese, jalapenos and some salsa for a delicious lunch or supper! You could also try this simple recipe with some leftover shredded chicken or baked sweet potato. serves 2

  • leftover slow-cooked beef

  • leftover mexican rice - find a simple recipe here

  • 2 tortillas

  • cheddar or edam

  • chopped tomatoes and avocado

  1. Warm through the rice and beef (this is where a microwave is so handy!)

  2. Pile some grated cheese on a tortilla and microwave or grill until melted.

  3. Add enough rice and beef to make a fat burrito, add some tomato and avocado and roll tightly.

  4. Cut in half and serve with optional pico de gallo, sour cream and jalepenos!
